Banana Walnut Baked Oatmeal

If you guys know me, you know that I am o b s e s s e d with all things oatmeal and banana, so I thought... what better recipe to make than one that has BOTH of my favorites?! This oatmeal bake came out SO good, so I will definitely be making different flavors every week! The key ingredient to this bake is the oats, of course, and these gluten free sprouted oats from One Degree Organics are the best in my opinion!! Banana Walnut Baked Oatmeal-

Ingredients:

  • 2 cups One Degree Organics gluten free sprouted rolled oats

  • Pinch of Himalayan pink salt

  • 1/4 cup chia seeds

  • 1/4 cup coconut sugar

  • 1/2 tsp. nutmeg

  • 3 tsp. cinnamon

  • 2 tsp. baking powder

  • 1 flax egg (1 tbsp. flaxseed meal + 2.5 tbsp. water)

  • Two small bananas (mashed)

  • 1 cup almond milk

  • 1/2 cup chopped walnuts (1/4 cup for batter and 1/4 cup for topping)

  • 1/4 cup chocolate chips (optional)

Directions:

  1. Preheat oven to 350F and spray an 8x8 baking dish.

  2. In a small bowl stir together the flax egg ingredients and let it sit for 5 minutes.

  3. In a mixing bowl, stir together the dry ingredients, then stir in the wet ingredients.

  4. Pour the mixture into the pan, top with chopped walnuts, and bake for 20 minutes!

  5. You can store it in the fridge for up to a week. Enjoy!
