Microwave Blueberry Banana Bread

Ingredients:

1 egg (you can use a flax egg, but the bread wont be as fluffy)

1 small ripe banana (mashed)

1/4 tsp. baking powder

3 tbsp. almond flour

1 tbsp. coconut flour

1/2 tsp. cinnamon

2-3 tbsp. blueberries (optional)

1 scoop @vitalproteins collagen (optional)

Directions:

  1. In a microwaveable mug, whisk together the egg and mashed banana.

  2. Stir in the dry ingredients, fold in the blueberries, and microwave for 2-2 1/2 minutes!
