Cookie Dough Baked Oatmeal

Ingredients:

  • o a t m e a l:
    1/2 cup rolled oats
    1 tbsp. coconut sugar
    1/4 tsp. baking powder
    1/4 cup + 2 tbsp. almond milk
    1 egg

  • c o o k i e d o u g h -
    2 tsp. pure maple syrup
    1 tsp. peanut butter
    2 tbsp. coconut flour
    2 tsp. mini chocolate chips {I used @enjoylifefoods chips}

Directions:

  1. Preheat oven to 350F & grease a small oven-safe ramekin {I used a mini loaf ramekin; you can find them at TJ Maxx, Tuesday Morning, Walmart, Amazon, etc.}

  2. Blend the oatmeal ingredients together, pour about half into the ramekin, crumble half the cookie dough on top, then add the remaining batter + cookie dough, and bake for 25 minutes!
