Mini Blueberry Muffins

Ingredients:

  • 1 egg

  • 1/4 cup almond milk

  • 1/2 cup frozen blueberries {slightly warmed-I microwaved mine for 40 seconds, then mashed them}

  • 1/2 cup sugar {I used coconut sugar}

  • 3/4 cup cassava flour {or all purpose flour}

  • 1/2 tsp. baking powder

Directions:

  1. Preheat oven to 350F and spray/line a mini muffin tin.

  2. In a large bowl, whisk together the egg and almond milk, then stir in the mashed blueberries.

  3. Add in the rest of the ingredients and stir until well combined.

  4. Pour batter into muffin tin {I made 14} and bake for 10 minutes! {I like to store mine in the fridge once they’ve cooled}
