Strawberry Chocolate Chip Bars

Ingredients:

  • 1 cup gluten free all purpose flour {OR regular all purpose flour}

  • 1/2 cup coconut sugar {or regular sugar}

  • 1/2 tsp. baking powder

  • 1/2 cup almond milk

  • 1/4 cup oil {I used olive oil}

  • 1 egg

  • 1/2 cup diced strawberries

  • 1/4 cup mini chocolate chips

Directions:

  1. Preheat oven to 350F & spray/line an 8x8 baking dish.

  2. In a large bowl, whisk together the flour, sugar, & baking powder.

  3. In a small bowl, whisk together the almond milk, oil, and egg.

  4. Pour the wet into the dry & stir until well combined.

  5. Lightly coat the strawberries & chocolate chips in a little extra flour {helps them to not sink to the bottom} then add those to the batter.

  6. Pour the batter into the 8x8 & bake for 23 minutes! {Let cool before cutting slices}
